Bored of plain spuds and steamed veg? These baked parmesan courgettes are a healthy side dish which will perk up a midweek meal in minutes. This lovely green vegetable is found in many different recipes in lots of different ways, whether they are jazzing up a stir fry or added for more of bite into a summer salad. However you will look at courgettes in a whole new light after trying them out like this! This super easy to prepare recipe is possibly the best healthy side dish we have ever tasted. And the best part about this one is that it’s low in carbohydrates and incredibly healthy for you.

Courgettes are a great source of potassium, which is important in maintaining a healthy blood pressure. The soluble fibre helps to lower blood cholesterol, and the cheese helps your body absorb the fat soluble vitamins found in the courgette.

A recipe like this can be used as healthy side dish, a snack which would go down a treat at a picnic or would be great accompaniment to any grilled meat dish.

Ingredients

4 courgettes quartered lengthwise

1/2 cup grated Parmesan

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon dried basil

1/4 teaspoon garlic powder

salt and freshly ground black pepper, to taste

2 tablespoons olive oil (low cal spay)

2 tablespoon chopped fresh parsley leaves

Instructions

Preheat oven to 180 degrees. Coat a cooling rack with nonstick spray and place on a baking sheet; set aside.

In a small bowl, combine Parmesan, thyme, oregano, basil, garlic powder, salt and pepper, to taste.

Place courgette onto prepared baking sheet. Drizzle with olive oil or low cal spray and sprinkle with Parmesan mixture. Place into oven and bake until tender, (about 15 minutes.) Then broil for 2-3 minutes, or until crisp and golden brown.

Serve immediately, garnished with parsley, if desired.
