Roasted Masala Chickpeas
Roasted Masala Chickpeas: Chickpeas, otherwise known as garbanzos have a delicious nutlike taste and a buttery, slightly pasty texture. They are rich in soluble and insoluble fibre, and contain a lot of protein without the high calories or saturated fat. They can boost energy due to their high iron content and their low GI value of 28-30 helps to balance blood sugar levels while providing steady, slow burning energy. This along with high fibre and protein makes chickpeas a great option, either for a main meal or a healthy snack as shown in this recipe.
SERVING SIZE – RECIPE MAKES 8 SERVINGS. 1 SERVING = 1/3 CUP
Ingredients:
2x15oz cans of chickpeas
1-2 tablespoons olive or safflower oil
½ to ¾ teaspoon salt
1 ½ teaspoons garam masala
1 ½ teaspoons garlic powder
½ to 1 teaspoon cayenne
½ teaspoon ground turmeric
1 teaspoon dry mango powder (Amchur) or chaat masala
3 tablespoons chickpea flour
2 tablespoons rice flour
NOTE: Other spices can be used, or a selection of the above.
Method:
Preheat oven to 425 degrees Fahrenheit
Drain and rinse canned chickpeas
Add chickpeas to a bowl
Add all spices and mix well
Add oil and mix well to coat
Dust chickpeas with chickpea and rice flour
Spray oil to help flour stick if needed
Spread chickpeas on parchment lined baking sheet
Bake for 20 minutes
Spray oil and move around with spatula
Cook for further 15 minutes (if chickpeas brown too quickly, reduce heat to 350 degrees)
Cool completely. Add salt if required. Toss and serve.
