If you want to rustle up a tasty vegetarian recipe and enjoy a meal in a short time then this is always a winner. Portobello mushrooms are mature Italian brown mushrooms that have an intense flavour and a meaty texture. Mushrooms are low in calories, fat free, cholesterol free, gluten free and very low in salt, yet they are a nutritional power house with high levels of fibre, selenium, potassium and B vitamins. It is wise to eat cheese only in moderation and reduced fat mozzarella has less saturated fat than the regular variety. It is worth adding to this vegetarian recipe as it not only adds taste and flavour, but also approximately 6-7 grams of protein. The mushroom burgers and salad can be ready in 30 minutes from start to finish and can be enjoyed as part of a healthy weight loss diet.

This vegetarian recipe serves 4 people and preparation time takes just 20 minutes.

Ingredients:

4 Portobello Mushrooms

2 tablespoons extra virgin olive oil

4 slices reduced fat mozzarella cheese (1oz per slice)

1 teaspoon dried or fresh basil

1 teaspoon dried oregano

1 tablespoon minced garlic

Salt and pepper

Method:

Chop off the stems and place the flat caps smooth side up in a shallow dish

In another bowl, whisk together the vinegar, oil, basil, oregano, garlic, salt and pepper

Pour the mixture over the mushrooms

Leave to stand for approx. 15 minutes turning them over twice

Preheat grill to medium

Brush the grill with oil and place mushrooms on grill. Grill on both sides for about 6-7 minutes brushing with marinade after turning

Top with cheese for last 2 minutes of grilling

Enjoy with a lettuce, tomato, red onion and roasted pepper salad.
