Prawn Power Salad – Serves 4

Ingredients:

10 oz pre cooked baby prawns

2 ¼ tablespoons white wine vinegar

½ teaspoon salt

½ teaspoon chilli powder

3 tablespoons extra virgin olive oil

3 cups lettuce torn into strips ( Butter)

2 grapefruit cut into segments

1 avocado peeled and thinly sliced

1 scallion finely chopped

4 teaspoons chopped coriander

Method:

Combine vinegar, salt and chilli in a small bowl.

Whisk in oil

Put lettuce on plates

Arrange grapefruit, prawns and avocado over lettuce

Sprinkle scallion and coriander on top of each salad

Drizzle chilli dressing over salad.
