There’s lots of recipe ideas out there for our favourite Tuesday of the year but few offer a healthy pancake recipe that is more fool proof and simple.

The good thing about pancakes in general is that you can make them as heavy or as light and as sweet or savoury as you like. But in the interest of losing weight we try to keep our healthy pancake recipe light and perfect for anyone with wheat or gluten allergies to help beat the dreaded bloat! So while we don’t want you feeling deprived or left out, we’ve got a healthy pancake recipe that you’re going to love.

The beauty of this healthy pancake recipe is that it takes minutes to whip up and you need very few ingredients.

INGREDIENTS FOR OUR HEALTHY PANCAKE RECIPE:

  • 2 large banana
  • 6 eggs
  • 1 tsp cinnamon
  • 1 tsp bread Soda
  • A handful of blueberries

All you need to do is simply blend the bananas and eggs in a blender, add the cinnamon and bread soda and stir through. And if you fancy a little extra something, gently stir in some blueberries too, a fantastic super food.

Spray a frying pan with some fry light spray and spoon the mix into little pancakes, cook on a medium heat and flip after 1-2minutes on each side.
